Berry Summer Salad with Chicken

Light, colorful and delicious — this is the perfect summer salad. I really enjoy cooking seasonally. Even though we can get pretty much any fruit all year long here in Nevada, fruits just taste better when they’re in season. My fiancé and I love going to our local Orchard, Farm and markets on Saturday mornings. Especially during summer, the produce is extra tasty. It’s also the time that berries are in season. A salad is a great way to utilize those fresh berries. This is a great version the Nordstrom Cafe’s Mixed Berry and Chicken Salad which is one of my favorites!

Serves 4
SALAD INGREDIENTS
10 cups mixed greens
2 large roasted chicken breasts, sliced
1 ½ cups raspberries
1 ½ cups blackberries
2 cups strawberries, sliced
½ cup blue cheese crumbles
½ cup candied walnuts
Blackberry Dressing
BLACKBERRY DRESSING:
1 cup store-bought champagne vinaigrette
7 blackberries
2 tbsp candied walnuts
DIRECTIONS:
To make the dressing, add the champagne vinaigrette, blackberries and walnuts to a blender and blend until smooth.
Place mixed greens in a large serving bowl. Begin adding dressing to the mixed greens, a few tablespoons at a time to avoid overdressing. Toss the lettuce with the dressing. Then add in berries, cheese, walnuts and chicken and toss lightly (to prevent mashing the berries).
Serve and enjoy!
