KETO Strawberry Shortcake

Light, colorful and delicious — this is the perfect summer cake. I really enjoy cooking seasonally. Even though we can get pretty much any fruit all year long here in Nevada, fruits just taste better when they’re in season. My Fiancé and I love going to our local Orchard, Farm and Market on Saturday mornings. Especially during summer, the produce is extra tasty. It’s also the time that berries are in season. A Shortcake is a great way to utilize those fresh berries and satisfy your sweet tooth the KETO way!


Serves 10

CAKE INGREDIENTS

· ¼ cup Almond Flour

· 4 Eggs

· 4 oz Cream Cheese

· 4 tbsp Butter (Kerrygold)

· 3 tsp Vanilla

· 1 tsp Baking Powder

· ¼ tsp Salt

· 1/2cup Stevia (other Sugar Substitute)

· 1/3 cup Sour Cream

CAKE DIRECTIONS

Pre-heat oven to 350

Combine Sugar Substitute and Butter in a mixing bowl. Beat until well mixed with an electric mixer on High. Add the cream cheese and sour cream mixing well until all ingredients are blended. And then add the eggs while still mixing one at a time. Once blended add the Vanilla. Next add all dry ingredients until everything is well combined.

Pour batter into a well-greased cake or loaf pan and bake for 30-40 minutes or until golden brown on top.

***I used a Bundt Pan and tested the cake with a toothpick to see if done or not. Depending on the brand of flour you use it could have a slightly different color than my cake pictured below***

WHIPPED CREAM INGREDIENTS

· 1 cup Heavy Whipping Cream

· 2 tsp Vanilla

· 2 tbsp Sweetener (I used stevia)

WHIPPED CREAM DIRECTIONS

Combine all ingredients into a mixing bowl. Using an electric mixer, mix all ingredients until it resembles a light fluffy texture. You can test by the peak left on the mixer when you pull it out.

It is now ready to serve, or you can chill it first and then serve.

STRAWBERRY TOPPING

· Sliced Strawberries

· Sweetener

TOPPING DIRECTIONS

Put the sliced strawberries into a bowl or container. Then put a few tsp of the sweetener of your choice over the top. Let rest and add more sweetener if need be after 5-10 minutes. This time will allow the strawberries and sugar to combine and produce a natural simple syrup. This is all to taste preference.
