Sweet Potatoes

This recipe has become a staple for Thanksgiving every year with my family. They are simple, super sweet and famous at our Family Thanksgiving. No matter how many sweet potatoes that are made, there are never leftovers because they are SO delicious people can’t get enough. This recipe is basically just sweet potatoes cooked in a simple syrup. It calls to use 1 part water to 2 parts sugar. I cut the sugar and just use equal parts water and sugar and they come out just as sweet. They look so simple and plain that no one would expect how delicious they are. But once you taste them, you’ll be hooked!




Ingredients:

  • 5 lb sweet potatoes, peeled

  • 7 cups of sugar

  • 7 cups of water

Directions:

Place sweet potatoes in a large pot and cover with water and sugar. Mix together. Place pot on the stove over high heat and bring to a boil. Once boiling, reduce heat to simmer and cover with the lid. Continue cooking until sweet potatoes are softened and a fork easily pierces them, about 15 to 30 minutes depending on how big they are. I occasionally like to rotate the sweet potatoes around in the pot with a spoon so that the color of each remains the same. Once fully cooked, remove from heat. Allow to cool slightly then serve.
