Salmon with Mango and Avocado Salsa

This dish is so light, flavorful and perfect for summer! When it’s as hot outside as it has been lately, the last thing I want to do is cook over a hot stove. This recipe is so easy and the only “cooking” you have to do is put the salmon in the oven. I’ve been making this recipe for years. It’s super fresh and healthy with bright colors and flavors.




Serves 4

Ingredients:

  • 2 mangoes, diced

  • 1 avocado, diced

  • ½ medium red onion, diced

  • ¼ cup cilantro, minced

  • 1 lime, juiced and zested

  • ¼ tsp red pepper flakes

  • 2 tbsp olive oil

  • Salt and pepper

  • 4 salmon fillets, (4 – 6 oz each)

Directions:

Preheat oven to 375 degrees.

To make the salsa, add mangoes, avocado, onion, cilantro, lime zest, lime juice, red pepper flakes, olive oil, and a big pinch of salt to a mixing bowl. Then toss together and set aside.

Place salmon fillets on a lined baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Place in the oven and cook for about 15 to 20 minutes, until salmon is easily flaked with a fork.

Spoon the mango avocado salsa over each cooked filet and serve.
