Bacon Wrapped Filet

The only thing better than filet mignon is filet mignon wrapped in bacon! My Husband does the grilling in our household. I’m usually the one marinating the steaks and then he takes them outside to grill on the BBQ. With summer here it is the perfect time to grill, but if it's as hot as Las Vegas gets you can cook it inside. I love this recipe because you can make it right on your stove-top. Cooking the steak in bacon fat and butter just makes it even more decant and delicious. This dish is super indulgent, looks impressive, and only takes about 15 to 20 minutes to make. It pairs perfectly with my Roasted Asparagus and Citrus Caprese Salad. Oh, and a nice glass of red wine!

Serves 2

Ingredients:

  • 2 slices of bacon

  • 2 filet mignon steaks

  • 2 tbsp olive oil

  • 2 tbsp butter

  • Salt and pepper

Directions:

Preheat oven to 450 degrees.

Place a medium oven proof pan (cast iron works perfect for this) over medium heat. Add bacon to the pan and begin to cook the bacon and render the fat. Don’t fully cook the bacon, but slightly cook it for a couple minutes ones each side. Then remove the partially cooked bacon from pan.

Generously season the steaks with salt and pepper on both sides. Wrap each steak with a piece of bacon and secure it with a toothpick. Increase the heat of the pan with the bacon fat to medium high. Then add olive oil and butter to the bacon fat. Place the steaks in the pan and cook for about 1 minute on each side to get a nice sear. Then place the pan in the oven to finish cooking, about 7 to 10 minutes for medium rare steaks. Remove from oven and place on a plate. Cover with foil and allow steaks to rest for about 5 minutes before serving.
